MCPDs, glycidol and their esters

3-Monochloropropane-1,2-diol (3-MCPD) and related substances known as 3-MCPD esters are food processing contaminants present in certain processed foods and vegetable oils. 3-MCPD and its esters are formed unintentionally in these foods, particularly when fats and vegetable oils are subjected to high temperatures, for example during refining. 3-MCPD is considered a potential human carcinogen.

Glycidyl fatty acid esters are undesirable substances that can be formed from natural ingredients during food production and processing, particularly during the manufacture of vegetable fats and oils. Glycidyl fatty acid esters are classified as probably genotoxic and carcinogenic compounds.
