Fumonisins
Fumonisins are toxins formed by moulds of the genus Fusarium on maize under certain climatic conditions. Fumonisins are classified as ‘possible carcinogens’ for humans.
Fumonisins (B1, B2) are globally widespread mycotoxins produced by Fusarium moniliforme, F. proliferatum and F. anthophilum. High levels of fumonisins are thought to cause oesophageal cancer in some parts of the world. The main source is maize, various maize-based products and millet.
Fusarium can cause symptoms after consumption, such as diarrhoea, nausea and vomiting.
As a general rule, mouldy products should not be eaten. People who have eaten mouldy products and have the symptoms listed below are advised to consult a doctor, mentioning that they have eaten these foods.
